Spicy Cajun Shrimp Casserole

I don't know about you but sometimes I get into a hardcore "I have no idea what to make for dinner slump." It feels like you literally just had "everything" and nothing sounds good. So what do you do? You look in that fridge and pantry and start throwing everything into a pot. And sometimes you get something special :-) Check out this easy 30 minute meal for those days when your feeling a little uninspired.


1 Pound of raw, peeled, large shirmp

Kosher Salt and Freshly- cracked pepper

1/2 Tsp Old Bay Seasoning

1 Tablespoon butter

1/2 Red bell pepper- sliced thinly

1/2 Green bell pepper- sliced thinly

1/2 red onion- sliced thinly

1 clove of garlic

1/2 tsp of Red Crushed Pepper Flakes

2 cups of cooked rice

1 jar of Alfredo sauce


Fresh Lemon, Parsley and Freshly Grated Parmesan Cheese.


1.Heat oven to 350 F

2. Season the shrimp on both sides with old bay seasoning, little bit of salt and pepper. Heat butter in large sauté pan over medium-high heart. Add the shrimp and sauté for 5 mins. Your not fully cooking the shrimp just getting them a little pink. Remove from the pan and set aside.

3. Add a little bit of butter to the pan and add the bell peppers, onions, red crushed pepper flakes, and garlic. Cook for about 5 minutes, stirring occasionally.

4. Transfer the cooked shrimp, veggie mixture, rice, and Alfredo sauce to a large baking dish, mix and spread out evenly.

5. Bake uncovered for 15 minutes. Remove from oven and serve immediately. Garnish with lemon juice, parmesan cheese, and parsley.
