Chicken Pesto Pasta

Quick, Easy, and Delicious is how I like most of my meals. I also like meals that give me max flavor with minimum effort and this recipe does just that! I like when bloggers get to the point when they are sharing a recipe so with that being said... (side note...not every recipe has a backstory, sometimes you just grab what's in the kitchen and whip it up)


1lb of chicken breast- cut into cubes

1/2 cup pesto sauce (I use this one)

1 cup grape tomatoes

1 teaspoon minced garlic

1/3 cup red onion

1/2 cup finely shredded parmesan cheese

1 Tbsp extra virgin olive oil

Salt and Pepper... I also added a little oregano but that's optional

8 oz bow tie pasta ( you can use any kind of pasta you want...this is just what I had)

In a large pot, combine 6 cups of water, combine a little salt and extra virgin olive oil and bring to a boil over high heat. Once the water starts boiling add the pasta and cook according to the box directions.

Meanwhile, heat a large skillet over medium high heat and add 1 tbsp of extra virgin olive oil in the pan.

Add the chicken and sprinkle with salt, pepper and oregano. Cook for 10 mins. Once the chicken is done, set aside in a bowl.

Next, in the same pan add a little bit more extra virgin olive oil, garlic, red onion and tomatoes. Cook for about 1 min.

Next add the pesto sauce and the chicken back and give it a good stir.

Once the pasta is al dente (pretty much done, but has a little bite to it) add the pasta into the large skillet. When you add a scoop at a time you get a little pasta water in there and it that just makes it better! So I've heard?!

Combine all the ingredients together, finish with the parmesan cheese and serve hot!
